Ginger Biscuits

12oz SR Flour
1 heaped teaspoon bicarbonate of soda
2 heaped teaspoons ground ginger
8oz granulated sugar
4oz margarine
1 egg
Generous tablespoon syrup
 
  Mix the dry ingredients and rub in the margarine.   Add syrup and lastly the egg.   Mix together.   The dough should be a bit sticky yet slightly crumbly.   Do not be tempted to add any liquid.

Put walnut-sized mounds onto a greased baking sheet, spaced to give the biscuits a little room to spread.   The biscuits rise in the baking and drop when taken out of the oven, giving them a 'cracked' appearance

Bake at Gas Mark 5, 190ºC, 170º Fan for 10-15 minutes until golden brown.
