ingredients
shortcrust pastry made with 8oz / 225g flour and 4 oz / 112g butter
topping
1lb / 250g a luxury mincemeat with brandy
zest of an orange
2 large egg whites
6oz / 175g ground almonds
6oz / 175g caster sugar
2oz / 60g flaked almonds or more if you want to be indulgent

method
1 Make the shortcrust pastry and line a Swiss roll tin
2 Spread the mincemeat over the pastry strew with the zest from an orange
3 Mix the egg whites with the sugar and ground almonds.   It will make a stiff paste
4 Spread the almond mix over the mincemeat and scatter the flaked almonds over the top
5 Bake at 170°C for 20-30 minutes in a fan oven.   190°C in a conventional oven
6 Leave to cool and cut into fingers or squares.
